Muesli, Ginger and Apricot Smoothie

This smoothie is quick to make and healthy too. Did we mention its also absolutely delicious?

  • Muesli, Ginger and Apricot Smoothie


  • 15g pieces fresh root ginger
  • 50g low fat fruit muesli
  • 8 plump dried apricots roughly chopped
  • 450ml apple juice
  • 1 tbsp lime or lemon juice
  • 4 tbsp natural yogurt

How to make it

  1. Peel the ginger and grate the flesh into a food processor or blender
  2. Add the muesli, apricots and a little of the apple juice and blend until smooth, scraping the mixture down from the sides of the bowl
  3. Add the remaining apple juice and lime or lemon juice and blend again
  4. Pour into 2 tall glasses and spoon the yogurt on top
  5. Lightly swirl the yogurt into the smoothie and serve

For a thinner consistency, add extra apple juice
