  • Cheese and Bacon Muffins


  • 250g plain flour
  • 1 tsp baking powder
  • half tsp fine sea salt
  • 175g cooked bacon chopped
  • 50g mature welsh cheese
  • 1 tsp mustard
  • pinch of cayenne
  • 1 tsp thyme leaves
  • 2 free range eggs lightly beaten
  • 65g melted butter or 80ml sunflower oil
  • 125ml low fat yoghurt

How to make it

  1. Sift the flour, salt and baking powder into a mixing bowl
  2. Add the rest of the ingredients and fold everything together with the lightest of touch, until just blended
  3. Do not over mix
  4. Spoon the mixture into the prepared muffin tins
  5. Bake in a preheated over, 180C gas mark 4 for 20 to 30 minutes until golden and firm
  6. Remove and allow to cool in the tin for 10 minutes

Muffins are so popular these days, and although they originate from America, they are delicious made with the addition of some Welsh quality cheese and bacon.
