  • 450g plain white flour
  • 225g wholemeal flour
  • 1 tsp bicarbonate of soda
  • 2 tsp salt
  • 25g butter
  • 568ml buttermilk

How to make it

  1. Preheat the oven 180C, gas mark 4
  2. Sieve all the dry ingredients into a bowl
  3. Rub in the butter
  4. Add the buttermilk a little at a time, you may need to add a little more or water, depending on the temperature of the flour
  5. Mix well
  6. Form a dough into a circular shape and place on a baking tray or in a roasting tin
  7. Score on top with a knife, into the shape of a cross
  8. Bake for 40 to 45 minutes
  9. Remove from the tray and return to the oven for a further 10 minutes

This classic Irish bread is great served with local jam or honey or for a more substantial breakfast top with toasted cheese or a poached egg.
