Do you have to tackle the rush hour commute each morning? Perhaps you leave the house early to beat the traffic and therefore breakfast can get forgotten.


It doesn't have to be that way though as many tasty breakfasts can be prepared in advance and enjoyed on the go or at your desk.


Here are three simple ideas from Nic to get you started... as well as a video showing how to maker her fantastic Baked Berry and Banana Oats.

'Deskfasters' need a combination of slow release energy (low glycaemic index carbohydrates) and protein, to keep them feeling full all morning.

  • Overnight Oats

    Oats, Milk, Yogurt, Fruit, Seeds / Nuts, Cinnamon

    The night before mix together 125ml milk, 40g oats, 125ml yogurt and a pinch of cinnamon.

    Cover the mixture to make an air tight seal (you could use clingfilm/foil or an airtight jar) and refrigerate overnight.

    Wait for morning time, add your chosen toppings and enjoy the creamy (low-calorie) goodness!

    These Overnight Oats can be eaten on the commute in a sealed jar on public transport or at your desk. You can prepare these the evening before with oats, yogurt, milk and then add toppings of fruit, nuts, cinnamon in the morning. Why not make in bulk at the weekend, then it’s super speedy to scoop out and enjoy each morning.

  • Baked Berry and Banana Oats

    Oats, Milk, Eggs, Fruit, Cinnamon

    Combine 80g rolled oats, 1 tsp baking powder, 1/4 tsp salt & 1 tsp cinnamon in a bowl and in another bowl combine 1 beaten egg, 1 mashed banana, 375ml milk and 1 tsp vanilla. Pour the wet ingredients into the dry. Mix well. Line an 8′′ pan (square or round) with parchment paper (for easy removal and cutting!). Layer some extra banana slices on the bottom (optional). Pour batter into pan.

    Top with some more banana slices & blueberries and bake in the oven at 190°C for about 25 minutes

    I love this fruity dish. Baked Berry and Banana Oats can be made in bulk in advance. It can be enjoyed hot or cold so is perfect for at home or on the go.

  • Fruit and Yogurt Smoothie

    Oats, Milk, Yogurt, Fruit

    Blend together the following ingredients:

    1⁄2 fresh or frozen banana,

    6 strawberries,

    2 tbsp oat flour,

    2 tbsp fat free Greek yogurt,

    200ml milk.

    Serve!

    Smoothies can be made quickly and drank on the go. By including fruit, vegetables and oats, they are a perfect way of getting nutrients in the morning. I love strawberries with banana, but the choices are almost endless.
