Breakfast Facts - Eggs

Eggs are packed with great nutrition including protein, essential vitamins A, D, E, and B group as well as minerals, including iron, phosphorus and zinc. They are relatively low in saturated fat, making them a healthy fast food for all the family and they are low in calories with only 78 kcals per medium egg - so they won't even spoil your diet.

To tell if an egg is fresh, place it in a bowl of water – if it sinks it’s fresh and if it floats it’s stale.

How to cook perfect eggs

For soft boiled eggs: Boil some water in a saucepan (you could add salt to the water to prevent the eggs from cracking).  Use eggs which have been at room temperature and carefully lower them into the saucepan using a tablespoon.    Reduce the heat so that the water is simmering.  Cook for five-seven minutes depending on how runny you like the yolk.
For hard boiled eggs: Follow instructions above but cook for 10-12 minutes.
When you remove the eggs from the saucepan, run them under cold water or immerse in a bowl of cold water to prevent them cooking further in their own heat.

Use two eggs per person.  Crack your eggs into a bowl, add salt and pepper and whisk using a fork.  Put a small saucepan on over a low heat, add some butter and let it melt.  Pour the eggs into the pan and stir slowly using a wooden spoon.  Remove from the heat when the eggs are firm, remember they will continue to cook slightly even after removed from the heat.

Make sure you use really fresh eggs.  Fill a wide pan with boiling water from the kettle.  Bring to a light simmer over a medium heat and add a pinch of salt.  Crack your egg into a cup and then gently pour it into the water.  Depending on the pan, a soft poached egg should take approximately two minutes and soft to firm should take four minutes.
